Virginia Loumis Eko's Obituary
Virginia Loumis Eko, 79, of Pleasant Grove, Utah, passed away on June 17, 2026.
Born on July 1, 1946 in Salt Lake City, Utah to John Sr. and Lucy Loumis. Virginia grew up in Cottonwood Heights in her family home, she graduated from Hillcrest High school with a scholarship offer to Brigham Young University. She went on to work in her family’s restaurant–Tampico that was on 167 Regent Street in downtown Salt Lake City (est. 1946-1988). After her family’s restaurant was sold, she decided to continue her career in the restaurant industry and managed many restaurants until she retired.
Virginia was known for her love of astronomy and history, she was known to always have a documentary playing on the television and often loved to watch for meteor showers and other astronomical phenomena. She had a passion for cooking, specializing in Greek cuisine, she would be found in her kitchen for many hours prepping and cooking some of her most delicious recipes that had been passed down from generations of family. Virginia was a proud Greek–She would decorate her home with pottery and statues from Greece, she could recite Greek prayers, and made it a tradition to attend the Greek Festival yearly in Salt Lake City.
She is survived by her two daughters, Stella Ksirakis-Salazar and Dea Jones; her four grandchildren, Tresa Rascon, Lexi Steele, Gabe Martensen, and Alexandra Ksirakis-Moreno; and her eight great-grandchildren, Amahia Rascon, Analia Rascon, Akahia Rascon, Christian Melendez, Nathan Melendez, Alejandro Arce, Cesar Moreno, and Kairos Moreno. Virginia is also survived by her brother, John Loumis Jr. and her sister, Kathy Bair. She was preceded in death by her parents, John Sr. and Lucy Loumis; and her eldest daughter, Para Ksirakis-Trujio.
Virginia’s love and support for her family will be forever remembered and cherished. Her family and loved ones will all miss her dearly.
